2 oz London Dry Gin (or Old Tom Gin if you can find it!)

Step-by-Step Instructions

Combine: In a cocktail shaker, combine the gin, fresh lemon juice, and simple syrup.

Shake: Fill the shaker with ice and shake well to chill and dilute.

Strain: Strain into a tall Collins or Highball glass completely filled with fresh ice.

Top off: Top the glass to the brim with bubbly club soda and give it one gentle stir.
